Mango Cilantro Salad

Directions

Dressing:
Juice of 2 large limes
1/2 c cilantro leaves
2 tsp hot sauce (I used less)
Salt and Pepper to taste
1/3 c Extra Virgin Olive Oil
1 tsp honey

Combine in Salad Bowl:
1 small red onion, minced
1 pint grape tomatoes, halved
2 mangos, chopped
3 avocados, chopped
1 can white corn, drained
1 can black beans, drained & rinsed
1 red pepper, chopped
Chopped hearts of Romaine

Put all dressing ingredients except olive oil in food processor. Turn on machine, then add EVOO while machine is running. Combine all veggies except avocado, toss with dressing and chill. Add avocado just before serving.
